For most of us young people, the easiest and least time consuming breakfast dish is always something to do with eggs. And, why not? When we are running late, the boss is on our tail, the phone doesn’t stop ringing, the maid doesn’t show up and amidst all this, there is an empty stomach to take care of, eggs cannot and will not disappoint.
So, we don our aprons and set foot in the kitchen and flick our magic wand and woosh! appears a plate of scrambled eggs and toast. But there is a slight problem. The scrambled eggs are not fluffy, they are not soft and they appear crumbly! What went wrong? You did what we all did. Just crack the eggs, break them apart with the knife (since it somehow always manages to sneak in at an arms length), add on some butter and place it on a semi-burnt toast.
But, stop! Let’s please promise ourselves that never again are we having such (either over or undercooked) eggs and punishing ourselves. We don’t deserve it! What we deserve is a plate of perfectly cooked and fluffy scrambled eggs and in the same time.

But how do we achieve this perfection? It’s simple:
1. Whip it well - Pardon the wordplay here, but please whisk the eggs properly so that the whites and the yolks are well combined. This lets air into the layers and makes for light, tender eggs.
2. Swear by non-stick - Always, and I mean always, use a non-stick pan and a wooden spatula please. It’ll avoid the eggs from sticking to the bottom and ensure easy cleaning too!
3. Butter is your friend - Don’t be afraid of butter. It’s such a magical ingredient. Admit it, butter lends an unmatched taste to any dish it is added to. In case, you are on a diet and cannot even look at butter, add a little bit of milk while whisking the eggs. It just lends a smooth texture and helps them in staying soft.
4. Slow and steady win the race - Let’s face it. Increased heat may result in faster cooking but it’s not always the perfect cooking. And as they say, perfectly cooked scrambled eggs take only a minute to cook! The trick is to cook them on a low heat with soft sweeps using the spatula.
5. Finish on the platter - Last but not the least, remove the eggs from the stovetop before they are finished cooking. They’ll look loose and a little runny. Because of the proteins, eggs have a tendency to tighten a bit even after they are removed from the heat.
Now, that we have what looks like a plate of perfectly cooked and fluffy scrambled eggs, it’s time to get a bit creative. Open the refrigerator and fish out for tender herbs, cheese or even nuts. Add-ons can make a world of a difference. And, don’t forget the good’ol salt and pepper.
